Step‑by‑Step Instructions
  1. Begin by opening the cans of salmon and draining the liquid. Flake the salmon with a fork until well broken up.
  2. Add breadcrumbs, finely chopped onion, and bell pepper to the bowl with flaked salmon. Crack in the eggs, followed by Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix thoroughly.
  3. With clean hands, scoop out the mixture and shape it into 2-3 inch patties. Lay the formed patties on a parchment-lined plate.
  4. In a large skillet, heat about 2 tablespoons of olive oil over medium-high heat until it shimmers.
  5. Carefully place the formed patties in the hot skillet, cooking for 4-5 minutes on one side until crisp and golden brown. Flip and cook for another 4-5 minutes.
  6. Remove the cooked patties from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve hot.
