  • 1 cup balsamic vinegar opt for high-quality aged versions for a richer taste
  • 2 tablespoons honey can substitute with maple syrup
  • 1 teaspoon Dijon mustard optional
For the Salad
  • 1 cup orzo pasta any small pasta shape works
  • 1 cup grape tomatoes can use cherry tomatoes or garden-fresh varieties
  • 8 ounces fresh mozzarella burrata is a wonderful alternative
  • 1 handful fresh basil can substitute with spinach
  • 2 tablespoons olive oil or avocado oil for an alternative

Method
 

Balsamic Syrup
  1. In a small saucepan, combine balsamic vinegar, honey, and Dijon mustard. Heat over medium until simmering, then reduce to low and cook for about 10 minutes until it thickens. Remove from heat and cool.
Cook Orzo
  1. Bring salted water to a boil, add orzo pasta and cook according to package instructions (around 8-10 minutes). Drain and rinse under cold water. Toss with olive oil.
Combine Salad Ingredients
  1. Halve grape tomatoes, cube mozzarella, and tear basil. In a mixing bowl, combine these with cooled orzo.
Season Salad
  1. Drizzle olive oil over the mixture, season with salt and pepper, and toss gently.
Serve
  1. Portion into bowls, drizzle with balsamic syrup, and garnish with basil before serving.
