Step-by-Step Instructions
  1. In a large mixing bowl, beat together the salted butter, granulated sugar, brown sugar, honey, and orange zest until smooth and fluffy, about 2-3 minutes. Then, beat in the egg and vanilla extract. Mix in finely ground pistachios and let the dough hydrate for 5 minutes.
  2. In a separate bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt. Gradually fold this mixture into the wet ingredients until just combined, then cover and refrigerate for 1-2 hours.
  3. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. Prepare the spiced sugar by mixing together the granulated sugar, orange zest, ground cardamom, and ground cinnamon.
  4. Scoop out the chilled dough and roll into balls. Coat in the spiced sugar and place on prepared sheets, spacing them about 3 inches apart. Optionally, sprinkle chopped pistachios on top and flatten slightly.
  5. Bake for 11-13 minutes until the edges are golden and centers are soft. Let cool on the baking sheets for 1 minute before transferring to a wire rack.
