- In a large mixing bowl, beat together the salted butter, granulated sugar, brown sugar, honey, and orange zest until smooth and fluffy, about 2-3 minutes. Then, beat in the egg and vanilla extract. Mix in finely ground pistachios and let the dough hydrate for 5 minutes.
- In a separate bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt. Gradually fold this mixture into the wet ingredients until just combined, then cover and refrigerate for 1-2 hours.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. Prepare the spiced sugar by mixing together the granulated sugar, orange zest, ground cardamom, and ground cinnamon.
