  2. Grate the two medium zucchinis and finely chop the onion. Combine these with the shredded cheddar and grated parmesan.
  3. Sprinkle in the self-raising flour, folding it gently into the zucchini and cheese mixture.
  4. In a separate bowl, whisk together the eggs, vegetable oil, salt, and pepper until frothy.
  5. Pour the egg mixture into the zucchini blend, folding gently to combine. Add optional bacon or ham if desired.
  6. Sprinkle in the freshly chopped parsley and give the mixture a final stir.
  7. Transfer the mixture into the lined baking dish, spreading it evenly with a spatula.
  8. Bake for 30-35 minutes until golden brown; a knife inserted should come out clean.
