- Grate the two medium zucchinis and finely chop the onion. Combine these with the shredded cheddar and grated parmesan.
- Sprinkle in the self-raising flour, folding it gently into the zucchini and cheese mixture.
- In a separate bowl, whisk together the eggs, vegetable oil, salt, and pepper until frothy.
- Pour the egg mixture into the zucchini blend, folding gently to combine. Add optional bacon or ham if desired.
- Sprinkle in the freshly chopped parsley and give the mixture a final stir.
