- Cook the pasta by bringing a large pot of salted water to a boil. Add the rotini and cook until al dente, usually around 8-10 minutes. Drain and set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season chicken on both sides with Cajun seasoning and cook for about 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt 2 tablespoons of butter. Sauté minced garlic for about 30 seconds. Add 1 cup of chicken broth and 1 cup of heavy cream, stirring to combine. Bring to a gentle simmer and add the cheeses until melted and smooth.
- Return the cooked rotini and sliced chicken to the skillet, toss gently in the creamy sauce and simmer for an additional 2-3 minutes. Season with salt and pepper to taste.
