Step-by-Step Instructions
  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the rotini and cook until al dente, usually around 8-10 minutes. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season chicken on both sides with Cajun seasoning and cook for about 6-7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt 2 tablespoons of butter. Sauté minced garlic for about 30 seconds. Add 1 cup of chicken broth and 1 cup of heavy cream, stirring to combine. Bring to a gentle simmer and add the cheeses until melted and smooth.
  4. Return the cooked rotini and sliced chicken to the skillet, toss gently in the creamy sauce and simmer for an additional 2-3 minutes. Season with salt and pepper to taste.
  5. Garnish with freshly chopped parsley and serve hot, optionally with extra cheese on top.
