Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly under cold water and cut each in half or quarters for even cooking. Place in a large mixing bowl.
  3. Drizzle olive oil over the potatoes, sprinkle in ranch seasoning mix, garlic powder, salt, and black pepper. Toss to coat.
  4. Slice the smoked beef sausage into bite-sized pieces and add to the potatoes. Mix thoroughly.
  5. Pour the potato and sausage mixture into a large baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 20-25 minutes until the potatoes are tender.
  7. Remove from oven and drizzle ranch dressing over the top, then sprinkle cheddar cheese evenly.
  8. Return to the oven for an additional 5-10 minutes until cheese is melted and bubbly.
