Step-by-Step Instructions for Cheesy Root Vegetable Gratin
  1. Preheat your oven to 400°F (200°C) and generously grease a 3-quart baking dish with unsalted butter.
  2. Thinly slice the sweet potatoes, parsnips, and beets into uniform pieces, aiming for about 1/8-inch thickness.
  3. Toss sliced sweet potatoes and parsnips with 4 tablespoons of the heavy cream, ½ ounce of grated Parmesan, thyme, salt, and pepper. Repeat with beet slices.
  4. Pour ¼ cup of cream into the prepared baking dish, sprinkle with the remaining ½ ounce of Parmesan and minced garlic, then layer the vegetable slices upright.
