- Preheat your oven to 400°F (200°C) and generously grease a 3-quart baking dish with unsalted butter.
- Thinly slice the sweet potatoes, parsnips, and beets into uniform pieces, aiming for about 1/8-inch thickness.
- Toss sliced sweet potatoes and parsnips with 4 tablespoons of the heavy cream, ½ ounce of grated Parmesan, thyme, salt, and pepper. Repeat with beet slices.
- Pour ¼ cup of cream into the prepared baking dish, sprinkle with the remaining ½ ounce of Parmesan and minced garlic, then layer the vegetable slices upright.
- Sprinkle the remaining seasonings and Parmesan over the top, cover with aluminum foil, and bake for 30 minutes.
