Step‑by‑Step Instructions for Cheesy Zucchini Bake
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and set out a 9x13 baking dish.
  2. Slice the zucchini into thin rounds and halve the cherry tomatoes. Mince the garlic, and combine all in a large mixing bowl.
  3. Sprinkle in salt, black pepper, dried oregano, and dried basil and toss everything until seasoned evenly.
  4. Drizzle olive oil over the seasoned vegetables and toss again for even coating.
  5. Spread half of the seasoned zucchini mixture in the baking dish.
  6. Sprinkle half of the shredded mozzarella cheese over the first layer and top with all of the grated Parmesan cheese.
  7. Spread the remaining zucchini and tomato mixture on top of the cheese layer.
  8. Top with the remaining mozzarella cheese and sprinkle breadcrumbs if using.
  9. Bake for 25-30 minutes until bubbling and golden brown.
  10. Let it sit for about 5 minutes before garnishing with parsley and serving.
