  • 1 cup Parmesan Cheese grated
  • 2 cups Mozzarella Cheese shredded
  • 1 cup Heavy Cream
  • 2 large Eggs beaten
  • 1/4 cup Fresh Basil for garnish

  • 1 loaf Crusty Bread for serving

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchini into thin rounds and sprinkle with salt. Let rest for 15 minutes and pat dry.
  3. In a skillet, heat olive oil and sauté onion and garlic for about 5 minutes.
  4. Mix sautéed onion and garlic with breadcrumbs, thyme, oregano, Parmesan, mozzarella, cream, and beaten eggs.
  5. Fold in the zucchini slices carefully.
  6. Grease the baking dish and pour the zucchini mixture.
  7. Sprinkle remaining mozzarella on top.
  8. Bake for 25-30 minutes until bubbly and golden-brown.
  9. Allow to cool for 5 minutes and garnish with basil before serving.
  10. Serve warm with salad or bread.
