Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onion and minced garlic until soft and fragrant, about 3-4 minutes.
  3. In a mixing bowl, combine sliced zucchini, corn, halved cherry tomatoes, sautéed onion, minced garlic, and seasonings. Toss gently to coat.
  4. Spread the vegetable mixture evenly in the greased baking dish.
  5. Sprinkle shredded mozzarella cheese over the top of the vegetable mixture.
  6. Mix together grated Parmesan cheese and panko breadcrumbs, then sprinkle evenly over the mozzarella layer.
  7. Drizzle a little olive oil over the breadcrumb topping and bake for 30-35 minutes until golden brown.
  8. Allow to cool for 5-10 minutes before garnishing with freshly chopped basil or parsley.
