- In a food processor, combine dates, protein powder, and sunflower seed butter. Pulse until the mixture is a sticky dough, about 1-2 minutes.
- Using your hands, scoop out approximately one tablespoon of the mixture and roll into balls about 1 inch in diameter. Place each ball on a parchment-lined tray.
- If coating, melt dark chocolate and dip each protein bite fully in it, allowing excess to drip off before placing back on the tray.
- Chill the tray in the refrigerator for about 30 minutes to firm up the bites.
- Store in an airtight container for up to one month in the fridge or three months in the freezer.
