Method
 

Step-by-Step Instructions
  1. In a food processor, combine dates, protein powder, and sunflower seed butter. Pulse until the mixture is a sticky dough, about 1-2 minutes.
  2. Using your hands, scoop out approximately one tablespoon of the mixture and roll into balls about 1 inch in diameter. Place each ball on a parchment-lined tray.
  3. If coating, melt dark chocolate and dip each protein bite fully in it, allowing excess to drip off before placing back on the tray.
  4. Chill the tray in the refrigerator for about 30 minutes to firm up the bites.
  5. Store in an airtight container for up to one month in the fridge or three months in the freezer.
