Ingredients
  

For the Batter
  • 1 cup Unsalted Butter at room temperature
  • 1 cup Brown Sugar can substitute with light or dark brown sugar
  • 1/2 cup Granulated Sugar no direct substitutes suggested
  • 1 large Egg at room temperature
  • 1 large Egg Yolk at room temperature
  • 2-3 teaspoons Dry Ground Coffee Granules instant coffee or espresso powder can be used
  • 1 teaspoon Vanilla Extract can swap with coffee extract
  • 2 teaspoons Brewed Black Coffee instant coffee can be used as a substitute
For the Dry Mix
  • 2.5 cups All-Purpose Flour accurately measured by spooning and leveling
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Kosher Salt
For the Chocolate
  • 1.5 cups Chocolate Chunks or Chips opt for dark or semi-sweet

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, combine unsalted butter, brown sugar, and granulated sugar, and beat until smooth and creamy.
  3. Add egg and egg yolk, mixing well to fully incorporate.
  4. Add dry ground coffee, vanilla extract, and brewed black coffee, mixing on low speed for 30 seconds.
  5. Add flour, baking powder, baking soda, and kosher salt. Mix on low until just combined.
  6. Fold in chocolate chunks or chips gently with a spatula.
  7. Cover the bowl and chill the dough in the refrigerator for 20 minutes.
  8. Scoop about 3 tablespoons of dough onto the prepared baking sheets and bake for 15-17 minutes.
  9. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
