Preparation
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a mixing bowl, combine unsalted butter, brown sugar, and granulated sugar, and beat until smooth and creamy.
- Add egg and egg yolk, mixing well to fully incorporate.
- Add dry ground coffee, vanilla extract, and brewed black coffee, mixing on low speed for 30 seconds.
- Add flour, baking powder, baking soda, and kosher salt. Mix on low until just combined.
- Fold in chocolate chunks or chips gently with a spatula.
- Cover the bowl and chill the dough in the refrigerator for 20 minutes.
- Scoop about 3 tablespoons of dough onto the prepared baking sheets and bake for 15-17 minutes.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
