Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC) and line two baking sheets with parchment paper.
  2. Cream together the softened unsalted butter, dark brown sugar, light brown sugar, and granulated sugar until smooth and creamy.
  3. Add in the large egg and vanilla extract to the creamed mixture and mix until fully combined.
  4. Gradually add the dark rye flour, baking powder, and kosher salt to the wet ingredients, mixing on low speed until just combined.
  5. Gently fold in the chopped chocolate or chocolate chips using a spatula.
  6. Divide the dough into 12 equal portions and roll into balls, slightly flattening each before placing on the baking sheets.
  7. Sprinkle flaky salt on top of each cookie dough ball.
  8. Bake the cookies for 10-12 minutes until the edges are golden brown.
