- In a food processor, combine cottage cheese, warm water, instant yeast, granulated sugar, and salt. Process until smooth and creamy.
- Add King Arthur unbleached bread flour, chopped cilantro, and chili crisp to the food processor. Pulse until a soft dough forms.
- Transfer dough to a greased bowl, cover with a towel, and let it rise for about 30-45 minutes until increased in volume by about 1.5 times.
- Turn dough onto a floured surface and knead gently for about 30-60 seconds until smooth and elastic.
- Divide dough into 4 pieces, shape into balls, cover with a kitchen towel, and let them rest for 15-30 minutes.
- Preheat a cast iron skillet over medium heat, lightly greasing it with vegetable oil. Roll out each ball into a flat disc about ¼ inch thick.
