  1. In a food processor, combine cottage cheese, warm water, instant yeast, granulated sugar, and salt. Process until smooth and creamy.
  2. Add King Arthur unbleached bread flour, chopped cilantro, and chili crisp to the food processor. Pulse until a soft dough forms.
  3. Transfer dough to a greased bowl, cover with a towel, and let it rise for about 30-45 minutes until increased in volume by about 1.5 times.
  4. Turn dough onto a floured surface and knead gently for about 30-60 seconds until smooth and elastic.
  5. Divide dough into 4 pieces, shape into balls, cover with a kitchen towel, and let them rest for 15-30 minutes.
  6. Preheat a cast iron skillet over medium heat, lightly greasing it with vegetable oil. Roll out each ball into a flat disc about ¼ inch thick.
  7. Cook flatbreads for 2 minutes on each side until golden brown. Alternatively, broil in the oven for 3 minutes per side.
  8. Brush warm flatbreads with additional chili crisp just before serving.
