Preparation Steps
  1. Peel and seed the cucumbers. Cut them into smaller chunks.
  2. Wash parsley and cilantro, and remove large stems. Pat dry.
  3. Combine cucumbers, herbs, avocados, lime juice, sour cream, olive oil, sherry vinegar, salt, and pepper in a blender.
  4. Blend the mixture on high speed until smooth, scraping down sides as needed.
  5. Taste and adjust seasonings as necessary.
  6. Transfer the gazpacho to a bowl or pitcher. Cover and refrigerate for at least 30 minutes.
  7. Serve in bowls, garnished with diced cucumbers and herb sprigs.
