Preparation
  1. In a small bowl, combine mayonnaise, minced chipotle peppers, and lime juice. Stir until smooth and creamy.
  2. Heat a skillet over medium heat and melt butter. Cook eggs to desired doneness, seasoning with salt and pepper, about 4-5 minutes.
  3. Toast English muffins until golden, then spread chipotle mayo on warm halves.
  4. Layer cheddar cheese on the bottom muffin half, followed by egg. Add optional bacon, avocado, and spinach, then cap with the other muffin half.
