- In your large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well blended.

- Peel and cut russet potatoes into uniform chunks. Boil in salted water for 15-20 minutes until fork-tender. Drain well.
- Combine the drained potatoes with milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy. Season with salt and pepper.
- Arrange the marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes and serve with creamy smoked gouda mashed potatoes.
