Method
 

Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and a large mixing bowl.
  2. In your large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until well blended.
  3. Add the bone-in chicken thighs to the marinade, coating thoroughly. Cover and let marinate for at least 30 minutes.
  4. Peel and cut russet potatoes into uniform chunks. Boil in salted water for 15-20 minutes until fork-tender. Drain well.
  5. Combine the drained potatoes with milk, unsalted butter, and smoked gouda cheese. Mash until smooth and creamy. Season with salt and pepper.
  6. Arrange the marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until the internal temperature reaches 165°F.
  7. Let the chicken rest for a few minutes and serve with creamy smoked gouda mashed potatoes.
