Step‑by‑Step Instructions for Chocolate Raspberry Oat Bars
  1. Preheat your oven to 375°F (190°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine rolled oats, whole wheat flour, brown sugar, baking powder, and salt. Mix thoroughly.
  3. Cut cold butter into small cubes, add to dry mixture, and work until it resembles coarse crumbs.
  4. Press two-thirds of the mixture into the bottom of the pan and bake for 10-13 minutes until golden.
  5. Combine raspberries, raspberry jam, and vanilla extract. Stir until well-coated and set aside.
  6. Spread the raspberry filling over the baked crust and sprinkle half of the chocolate chips over it.
  7. Crumble the remaining oat mixture over the filling and sprinkle the rest of the chocolate chips on top.
  8. Bake for an additional 22-25 minutes until the top is lightly browned and filling is bubbling.
  9. Cool completely in the pan, then refrigerate for at least 2 hours before cutting into squares.
