  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For Optional Toppings
  • 1/2 cup Chopped Pecans Can substitute with walnuts
  • 1/2 cup Dried Cranberries Raisins as an alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel and cube sweet potatoes; core and chop apples into uniform pieces.
  3. In a mixing bowl, whisk together olive oil, maple syrup, ground cinnamon, nutmeg, ginger, salt, and black pepper.
  4. Pour the mixture over the sweet potatoes and apples, and toss to coat evenly.
  5. Spread the coated sweet potatoes and apples in a single layer on the baking sheet.
  6. Roast in the oven for 25-30 minutes, stirring halfway through for even caramelization.
  7. During the last 5 minutes of roasting, sprinkle the optional toppings over the dish.
  8. Allow to cool for 5 minutes before serving warm.
