  • 3 medium Ripe Bananas Mashed
  • 1/3 cup Vegan Butter Melted
  • 1/3 cup Maple Syrup
  • 3/4 cup Almond/Oat Milk Non-dairy
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 teaspoons Cinnamon
  • 1/4 teaspoon Salt
  • 2 cups Flour All-purpose or gluten-free
  • 1 cup Rolled Oats Quick oats can be used as substitute
For the Cinnamon Swirl
  • 1/4 cup Light Brown Sugar
For the Glaze
  • 1 cup Powdered Sugar
  • 2 tablespoons Vegan Cream Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash about three very ripe bananas in a large mixing bowl.
  3. Mix in melted vegan butter, maple syrup, almond milk, and vanilla extract.
  4. In a separate bowl, whisk together baking powder, baking soda, cinnamon, salt, and flour.
  5. Gradually incorporate the dry mixture into the wet ingredients, mixing until just combined.
  6. Gently fold in rolled oats.
  7. Mix melted vegan butter, light brown sugar, and a dash of cinnamon for the swirl mixture.
  8. Pour half of the batter into the loaf pan, drizzle half of the swirl mixture, and add the remaining batter. Top with the rest of the swirl and create swirls with a knife.
  9. Bake for 45-55 minutes, until golden brown and a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack.
  11. Whisk together powdered sugar, melted vegan butter, and vegan cream cheese for the glaze. Drizzle over the cooled bread.
  12. Slice and serve warm or at room temperature.
