Ingredients
  

For the Muffins
  • 1 lb Ground Chicken or Turkey can substitute with lean ground beef or pork
  • 1/2 cup Crushed Pineapple drained well
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 2 tbsp Coconut Oil or Avocado Oil or olive oil as an alternative
For the Sauce
  • 2 tbsp Olive Oil
  • 2 cloves Fresh Minced Garlic or substitute with garlic powder
  • 3 tbsp Coconut Aminos soy sauce alternative
  • 1/2 cup Pineapple Juice reserved from crushed pineapple
  • 1 tbsp Arrowroot or Potato Starch (optional) for thickening

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken or turkey, crushed pineapple, salt, paprika, onion powder, and garlic powder. Mix thoroughly.
  3. Form the meat mixture into 1½-tablespoon-sized balls and place them on the prepared baking sheet.
  4. Bake the meatballs in the oven for 25 minutes, or cook on stovetop for about 15 minutes until browned.
  5. Heat olive oil in a small saucepan, add minced garlic and sauté until fragrant. Then add pineapple juice and coconut aminos, simmer for flavor.
  6. For a thicker sauce, combine arrowroot starch with water, add to sauce, and stir until thickened.
  7. Toss the cooked meatballs in the sauce until well-coated and serve.
