- In a small bowl, whisk together lime juice and zest, lemon juice and zest, and orange juice and zest. Add minced garlic, chopped rosemary, salt, pepper, olive oil, and sugar-free honey, mixing until all ingredients are well blended and fragrant.
- Place your fresh salmon filets in a shallow container and pour the prepared marinade over them. Ensure each filet is thoroughly coated on all sides. Cover the container with plastic wrap and let the salmon marinate in the refrigerator for 1 hour.
- Preheat your oven to 425°F (220°C). Allow the salmon to rest at room temperature for about 15 minutes.
- Pour the leftover marinade into a saucepan. Simmer the marinade over medium heat for about 10 minutes, allowing it to reduce and thicken slightly.
- Line a baking sheet with aluminum foil and place a wire rack on top. Lay the marinated salmon filets on the rack. Bake for approximately 10 minutes.
- Remove the salmon from the oven and brush a generous amount of the thickened glaze over each filet. Broil for 2-4 minutes until the glaze caramelizes.
