For the Filling
  • 1 can sweetened condensed milk
  • 1/2 cup freshly squeezed lime juice Bottled juice can be used in a pinch
  • 1 teaspoon pure vanilla extract
  • 2 cups sweetened flaked coconut Divided for filling and topping
  • 3 large eggs Must be beaten before use

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
  2. In a food processor, combine the flour, macadamia nuts, brown sugar, and lime zest. Pulse until nuts are coarsely ground. Add butter and pulse until resembling wet sand. Press into the prepared pan and bake for 15-20 minutes until golden.
  3. In a large mixing bowl, whisk together the sweetened condensed milk, lime juice, vanilla extract, and beaten eggs until smooth. Fold in 2 cups of sweetened flaked coconut and remaining lime zest.
  4. Pour the coconut-lime filling over the warm crust. Sprinkle with remaining toasted coconut and lime zest, pressing gently into the filling.
  5. Return to the oven and bake for an additional 15-20 minutes until filling is set and edges slightly puffed. Center may jiggle but will firm as it cools.
  6. Allow to cool completely at room temperature. For best results, refrigerate for an hour, lift out of the pan using parchment overhang, slice, and serve.
