  • 1 cup Cherry tomatoes diced regular tomatoes can be a substitute
  • 1 cup Bell pepper zucchini or green beans can be used instead
  • 1 tbsp Fish sauce soy sauce or tamari can be an alternative
  • 2 tbsp Lime juice and zest fresh lime is preferred
  • to taste Salt and pepper adjust according to your preference
  • 1/4 cup Fresh cilantro optional, basil or parsley can work as well
  • for serving Lime wedges served alongside for an extra zesty kick

Step-by-Step Instructions for Coconut Lime Fish Soup
  1. Prepare the fish by cutting the white fish fillets into bite-sized pieces and set aside.
  2. Heat the vegetable oil in a large pot over medium heat until shimmering.
  3. Sauté diced onion, minced garlic, and grated ginger in the oil for 3-4 minutes until translucent.
  4. Add broth and bring to a gentle simmer for about 5 minutes.
  5. Stir in coconut milk and bring to a gentle simmer for an additional 2-3 minutes.
  6. Fold in halved cherry tomatoes and sliced bell pepper, and let simmer for 5 minutes.
  7. Mix in fish sauce, lime juice, lime zest, salt, and pepper to taste; let simmer for 1-2 minutes.
  8. Add prepared fish pieces and simmer for 5-7 minutes until the fish is opaque.
