Step-by-Step Instructions
  1. In a large skillet, melt 2 tablespoons of coconut oil over medium heat. Add 4 cloves of minced garlic and sauté for about 2 minutes, stirring frequently, until the garlic becomes fragrant and golden.
  2. Zest 2 limes and set the zest aside for garnish. Squeeze the juice from all 4 limes and add it to the skillet, along with a can of coconut milk and 1/2 teaspoon of salt. Stir well and let the mixture simmer on low heat for about 5-7 minutes.
  3. Add 1 pound of shrimp to the skillet, ensuring they are well coated in the sauce. Cook for about 3-4 minutes, flipping the shrimp halfway through.
  4. Remove the skillet from heat and stir in 1/4 cup of chopped cilantro if desired. Plate the Coconut Lime Shrimp, and sprinkle the reserved lime zest and toasted coconut on top.
