- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Spread the thawed hash browns evenly across the bottom of the baking dish.
- Distribute the diced ham evenly over the hash browns and sprinkle half of the shredded cheese on top.
- Add the sliced green onions on top of the ham and cheese.
- Whisk together the eggs, evaporated milk, black pepper, salt, and optional mustard until smooth.
- Pour the egg mixture evenly over the layered ingredients.
- Sprinkle the remaining shredded cheddar cheese on top of the casserole.
- Bake uncovered for 45–55 minutes until the eggs are set and the top is golden brown.
- Remove from oven and let cool for at least 10 minutes before slicing.
