- In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add diced yellow onion and sauté until translucent, about 4-5 minutes.
- Stir in minced garlic and sauté for an additional minute until fragrant.
- Add shredded rotisserie chicken and diced green chilies to the pot. Stir well and warm through for about 2 minutes.
- Pour in 4 cups of chicken broth and 1 cup of green enchilada sauce. Increase heat slightly to bring to a gentle boil, about 3-4 minutes.
- Once boiling, reduce heat to low and let the soup simmer uncovered for 10-15 minutes.
- Stir in 1 cup of heavy cream and 1 cup of shredded cheese. Mix until cheese melts completely.
- Taste and adjust seasoning with salt, pepper, cumin, and chili powder as desired.
