Step-by-Step Instructions
  1. In a skillet over medium heat, add olive oil and sliced yellow onions. Cook for 8-10 minutes until soft, then reduce heat to medium-low and caramelize for 20-30 minutes, stirring occasionally.
  2. Preheat your oven to 475°F (245°C). Place a pizza stone in the oven to heat up.
  3. On a floured surface, stretch or roll out fresh pizza dough into a round shape of about 12-14 inches. Transfer it onto parchment paper.
  4. Spread canned pumpkin puree over the shaped dough, leaving a 1/2 inch border for crust.
  5. Distribute caramelized onions and garlic evenly over the pumpkin layer, then sprinkle gouda cheese on top.
  6. Transfer the pie to the preheated stone and bake for 12-15 minutes until the crust is golden and the cheese is bubbling.
  7. Remove from the oven, let cool slightly, then garnish with parsley if desired. Slice and serve hot.
