  • 1 large head Cauliflower
  • 2 tablespoons Olive Oil or vegetable oil

  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Dried Rosemary or thyme
For the Cheese Sauce
  • 4 tablespoons Butter can use margarine
  • 1/4 cup Flour or gluten-free flour
  • 1 cup Cream or Milk whole milk or heavy cream
  • 1 cup Shredded Mozzarella can substitute with fontina
  • 1 cup Shredded Cheddar or cheese blend
  • 1 teaspoon Mustard optional
For Garnish
  • to taste Chives or parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Rinse and cut the cauliflower into even florets. Drizzle olive oil and seasonings over the florets.
  2. Place the baking dish with seasoned cauliflower in the oven and roast for about 10 minutes until slightly tender.
  3. In a saucepan, melt butter over medium-high heat. Whisk in flour to form a roux, then gradually stir in cream or milk until thickened.
  4. Add shredded mozzarella and cheddar to the sauce, stirring until melted and blended. Season the sauce to taste.
  5. Pour the cheese sauce over the roasted cauliflower, ensuring it is well coated. Bake at 350°F (175°C) for 20 minutes.
  6. Sprinkle extra shredded cheese on top and broil for 2-3 minutes until golden. Remove and let set for a minute before serving.
  7. Garnish with chopped chives before serving warm as a side dish.
