- Preheat your oven to 425°F (220°C). Rinse and cut the cauliflower into even florets. Drizzle olive oil and seasonings over the florets.
- Place the baking dish with seasoned cauliflower in the oven and roast for about 10 minutes until slightly tender.
- In a saucepan, melt butter over medium-high heat. Whisk in flour to form a roux, then gradually stir in cream or milk until thickened.
- Add shredded mozzarella and cheddar to the sauce, stirring until melted and blended. Season the sauce to taste.
- Pour the cheese sauce over the roasted cauliflower, ensuring it is well coated. Bake at 350°F (175°C) for 20 minutes.
- Sprinkle extra shredded cheese on top and broil for 2-3 minutes until golden. Remove and let set for a minute before serving.
- Garnish with chopped chives before serving warm as a side dish.
