Step-by-Step Instructions
  1. Begin by placing the boneless, skinless chicken breasts at the bottom of your Crock Pot.
  2. Sprinkle the diced onions and minced garlic over the chicken, stirring gently to distribute evenly.
  3. Pour the chicken broth and diced tomatoes into the Crock Pot, stirring to combine all ingredients.
  4. Sprinkle the Italian seasoning over the soup and season with salt and pepper. Cover and cook on low for 6 hours.
  5. After 6 hours, remove the chicken from the Crock Pot and shred it into bite-sized pieces.
  6. Return the shredded chicken to the Crock Pot and stir in the heavy cream and grated Parmesan cheese.
  7. Toss in the tortellini and fresh spinach, stirring gently. Switch the Crock Pot to high and cook for an additional 30 minutes.
