- Prepare the Chicken: Pat dry chicken and season with salt, pepper, and paprika. Sear in a Dutch oven for 6-7 minutes per side until golden brown. Remove and let rest.
- Sauté Vegetables: In the same Dutch oven, add chopped onions, carrots, and celery. Sauté for 5-6 minutes until softened. Add minced garlic and cook for another minute.
- Cook Mushrooms: Add sliced mushrooms and sauté for 5-7 minutes until caramelized. Combine with chicken and vegetables.
- Make the Sauce: Melt butter in the pot, add flour to create a roux. Gradually whisk in broth and milk, cooking until thickened. Stir in cheeses and season.
- Combine & Assemble: In a bowl, mix cooked wild rice, chicken mixture, and sauce. Transfer to greased baking dish, top with cheese and panko.
- Bake: Preheat oven to 350°F. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden.
