  2. If using chicken breasts, gently pound them to an even thickness. Rub the spice mixture over the chicken.
  3. Heat 2 tablespoons of avocado oil in a large skillet. Add the chicken and cook for 4–5 minutes on each side until golden brown.
  4. In the same skillet, add the chopped shallot and minced garlic; cook for 1–2 minutes until fragrant.
  5. Pour in one can of full-fat coconut milk, ½ cup chicken broth, and 1 tablespoon arrowroot starch. Whisk to combine and simmer for 2–3 minutes.
  6. Return the chicken to the skillet, cover, and simmer for 3–4 minutes until fully cooked.
