- Finely chop one shallot and mince three cloves of garlic. Mix together 1 teaspoon of Italian seasoning, ½ teaspoon of sea salt, and ¼ teaspoon of black pepper.
- If using chicken breasts, gently pound them to an even thickness. Rub the spice mixture over the chicken.
- Heat 2 tablespoons of avocado oil in a large skillet. Add the chicken and cook for 4–5 minutes on each side until golden brown.
- In the same skillet, add the chopped shallot and minced garlic; cook for 1–2 minutes until fragrant.
- Pour in one can of full-fat coconut milk, ½ cup chicken broth, and 1 tablespoon arrowroot starch. Whisk to combine and simmer for 2–3 minutes.
- Return the chicken to the skillet, cover, and simmer for 3–4 minutes until fully cooked.
- Stir in 2 cups of fresh spinach and chopped basil. Cook for an additional minute until the spinach wilts.
- Serve hot, spooning the sauce over the chicken, optionally garnish with chopped parsley.
