Preparation
- Gather all your ingredients for the Easy Avocado Pesto. Rinse basil leaves and pat dry.
- Slice avocados in half, remove the pit, and scoop the flesh into a food processor. Juice the lemon and prepare garlic.
- Add basil, avocado flesh, grated cheeses, garlic, lemon juice, olive oil, pine nuts, salt, and pepper into the food processor.
- Blend for about 30 seconds until creamy consistency is achieved.
- Pulse mixture for an additional 15-30 seconds until basil is finely chopped.
- Taste and adjust seasoning with more lemon juice, garlic, salt, or pepper as needed.
- Drizzle more olive oil if too thick to adjust the consistency to your liking.
- Serve over pasta, in salads, or as a spread. Store in an airtight container with olive oil on top.
