Ingredients
  

For the Soup Base
  • 1 cup raw cashews soaked
  • 2 tablespoons extra-virgin olive oil or vegetable broth for oil-free
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1 teaspoon fine sea salt to taste
For the Veggie Medley
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 can diced tomatoes include juices
  • 2 cups Swiss chard or kale, chopped
For Flavor Enhancements
  • 1 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground black pepper to taste
  • 1 tablespoon white wine vinegar or lemon juice
For the Protein
  • 1 cup French green lentils rinsed
For the Liquid
  • 6 cups low-sodium veggie broth

Method
 

Step-by-Step Instructions
  1. Soak 1 cup of raw cashews in water for 1-2 hours. Drain and blend with about ¾ cup fresh water until smooth. Set aside.
  2. Heat 2 tablespoons of olive oil in a Dutch oven over medium heat. Sauté 1 diced onion and 3 minced garlic cloves for 4-6 minutes until fragrant.
  3. Add 2 diced carrots and 2 diced celery stalks, then 1 teaspoon each of ground cumin, thyme, and turmeric. Sauté for 2-3 minutes.
  4. Pour in a can of diced tomatoes, 1 cup of rinsed lentils, and 6 cups of veggie broth. Bring to a boil, then simmer for 30-35 minutes.
  5. Stir in the cashew cream and 2 cups of chopped Swiss chard. Season with salt, pepper, and a splash of vinegar or lemon juice. Cook for 5-7 minutes.
  6. Ladle the soup into bowls and serve hot, optionally with crusty whole grain bread.
