  • 2-3 cloves Garlic minced
  • 1 cup Chicken Broth or vegetable broth
  • 1 cup Heavy Cream or half-and-half
  • 1 cup Parmesan Cheese grated, or Pecorino Romano
  • to taste Salt
  • to taste Pepper
  • optional Red Pepper Flakes omit for milder dish
  • to garnish Fresh Parsley or basil, if unavailable

Method
 

Step-by-Step Instructions
  1. Sauté the sausage in a large skillet with olive oil over medium heat for 5-7 minutes until browned. Transfer to a plate.
  2. Cook tortellini in boiling salted water for 3-5 minutes until tender, then drain.
  3. In the same skillet, melt butter and sauté minced garlic for about 30 seconds until fragrant.
  4. Add chopped broccoli to the skillet and sauté for 3-4 minutes until bright green.
  5. Pour chicken broth and heavy cream into the skillet, then whisk in Parmesan cheese until smooth.
  6. Combine the cooked sausage and tortellini in the skillet, tossing to coat. Cook for an additional 2-3 minutes.
  7. Adjust sauce consistency with reserved pasta water or chicken broth if too thick.
  8. Season with salt, pepper, red pepper flakes, and garnish with parsley and extra Parmesan before serving.
