Ingredients
  

For the Base
  • 2 tbsp Olive Oil Can substitute with canola oil
  • 1 lb Chicken Breast Cut into bite-sized pieces
  • 1 lb Asparagus Trim tough ends
  • 1.5 cups Orzo Small pasta that soaks up flavors
For the Flavor
  • 1 unit Lemon Use juice and zest
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 0.75 cup Leeks Sliced
  • 5 cloves Garlic Minced
  • 0.25 tsp Red Pepper Flakes Optional
For the Creamy Sauce
  • 3 cups Chicken Broth Low sodium
  • 0.75 cup Water
  • 5.2 oz Boursin Cheese Or any creamy herb cheese spread
  • 2 tbsp Fresh Lemon Juice
  • 0.33 cup Fresh Parsley Chopped

Preparation Steps
  1. Cut the chicken breast into bite-sized pieces and set aside. Trim the tough ends off the asparagus and cut them into 1-inch pieces. Slice the leeks, mince the garlic, and zest and juice the lemon.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the bite-sized chicken pieces and sauté for 5-6 minutes until golden brown and cooked through.
  3. In the same skillet, sauté the trimmed asparagus with salt and pepper for about 6-9 minutes until tender-crisp.
  4. Reduce heat to medium-low, adding another tablespoon of olive oil if needed. Sauté sliced leeks for 5-6 minutes until softened. Add minced garlic and red pepper flakes, cooking for an additional minute.
  5. Stir in the orzo and lightly toast for about 3-4 minutes, stirring frequently.
  6. Pour in chicken broth and water, bringing to a boil. Reduce heat to low and cover, allowing to simmer for 10-12 minutes until orzo absorbs the liquid.
  7. Fold the sautéed chicken and asparagus back into the skillet. Crumble Boursin cheese over and stir gently until the cheese melts.
  8. Remove from heat, cover for 4-5 minutes to allow flavors to meld. Adjust seasoning with lemon juice, salt, and pepper before serving.
