Ingredients

For the Pasta
  • 1 lb Dry Pasta Use mezzi rigatoni, ziti, or fusilli for the best texture.
For the Sauce
  • 2 Tbsp Butter Adds richness and flavor; can substitute with olive oil for a dairy-free option.
  • 2 Tbsp Extra-Virgin Olive Oil Used for sautéing; enhances flavor beautifully.
  • 8 oz Cremini Mushrooms Offers an earthy flavor and meaty texture; sub with button mushrooms if desired.
  • 1 Yellow Onion Provides an aromatic base; red onion is a suitable substitute.
  • ¼ cup Tomato Paste Adds depth and slight acidity; sun-dried tomato paste can work as a replacement.
  • 4 cloves Garlic Essential for aromatic flavor; don't skip this step!
  • ½ tsp Crushed Red Pepper Flakes Adds a mild heat; adjust according to your taste preference.
  • 3-4 handfuls Fresh Baby Spinach A nutrient boost for the dish; substitute kale if preferred.
  • 1 tsp Dried Oregano Enhances herb flavor; can substitute with Italian seasoning.
  • 1 tsp Kosher Salt Essential seasonings to adjust to your taste.
  • ½ tsp Black Pepper Essential seasonings to adjust to your taste.
  • ¼ tsp Ground Nutmeg Warms up the dish and enhances the autumn flavor profile.
  • 3 cups Vegetable Broth Forms the base for the sauce and adds moisture; chicken broth works for non-vegetarians.
  • 1 can (15 oz) Pumpkin Purée The star ingredient for the sauce; ensure it’s pure pumpkin, not pie filling.
For the Topping
  • ½ cup Walnuts Provides crunch and nutty flavor; pecans are a good alternative.
  • 2 Tbsp Fresh Sage An herb enhancer; thyme can be substituted if needed.
  • ½ cup Parmesan Cheese Adds creaminess and umami flavor; for dairy-free, use nutritional yeast.
  • cups Fontina Cheese, divided Creamy melting cheese perfect for topping; mozzarella can be used instead.

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add 1 pound of dry pasta and cook until just 2 minutes shy of al dente, about 7-8 minutes. Drain and set aside.
  3. In a large sauté pan over medium heat, melt 2 tablespoons of butter. Add ½ cup walnuts and 2 tablespoons of fresh sage. Cook for about 5 minutes until golden. Remove, leaving drippings.
  4. In the same sauté pan, add 2 tablespoons of extra-virgin olive oil, 8 ounces of cremini mushrooms, and 1 chopped yellow onion. Sauté for 7-8 minutes until onions are translucent and mushrooms are browned.
  5. Incorporate ¼ cup of tomato paste, 4 minced garlic cloves, and ½ teaspoon of crushed red pepper flakes. Stir and cook for 2-3 minutes until fragrant.
  6. Add 3-4 handfuls of fresh baby spinach. Stir until just wilted. Add 1 teaspoon of dried oregano, 1 teaspoon of kosher salt, ½ teaspoon of black pepper, and ¼ teaspoon of ground nutmeg.
  7. Pour in 3 cups of vegetable broth. Stir in 15 ounces of pumpkin purée, ½ cup of Parmesan, and half of the 1½ cups fontina cheese. Mix until smooth.
  8. Gently mix the cooked pasta into the pumpkin sauce until well coated.
  9. Transfer the mixture to a greased 13x9-inch baking dish. Top with remaining fontina cheese and walnut-sage mixture.
  10. Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and golden.
