Cooking Directions
- In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a rolling boil over high heat. Stir occasionally to help the salt dissolve.
- Once boiling, reduce the heat to medium and gradually whisk in 1 cup of yellow cornmeal. Continue whisking until the mixture is smooth and thickened, about 2 minutes.
- Lower the heat to medium-low and let the polenta simmer uncovered for 10 to 15 minutes, stirring frequently.
- Remove from heat and stir in 2 tablespoons of vegan butter.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add 3 cloves of minced garlic and sauté for about 1 minute.
- Add 8 ounces of sliced baby Bella and shiitake mushrooms, seasoning with salt and pepper. Sauté for about 5 minutes.
- Sprinkle in 1 teaspoon of dried rosemary and pour in 1 cup of red wine. Stir and bring to a simmer.
- Cook for 5 to 7 minutes until the wine reduces by half.
- Whisk together 1 cup of vegetable broth and 1 tablespoon of corn starch until smooth. Pour into the sautéed mushrooms and stir well.
- Simmer on low heat for about 2 to 3 minutes until the sauce is thick and glossy.
- Taste polenta for seasoning and adjust if necessary. Stir until smooth, keeping warm.
- Spoon the creamy polenta into bowls and generously ladle the mushroom sauce over the top.
- Enjoy your comforting dish immediately.
