Step-by-Step Instructions
  1. In a medium-sized skillet, heat 2 tablespoons of extra virgin olive oil over medium heat until shimmering.
  2. Add 1 diced yellow or sweet onion and sauté for about 9-10 minutes, until lightly golden brown.
  3. Stir in 2 minced garlic cloves and 1 teaspoon of dried thyme, and cook for an additional 1-2 minutes.
  4. Transfer the mixture to a blender along with 1 cup of pumpkin puree and 1 cup of vegetable broth, blending until smooth.
  5. Return the blended sauce to the skillet, season with salt and pepper, and simmer for a couple of minutes.
