- In a heavy skillet, melt 2 tablespoons of butter over medium-high heat until bubbling.
- Add 2 cups of fresh or frozen corn, 1 diced onion, 1 chopped jalapeño, and 1 diced red pepper into the hot skillet.
- After the initial charring, stir the vegetable mixture frequently for another 5 minutes until they are evenly charred and softened.
- Lower the heat to medium-low, then stir in 2 cups of shredded Monterey Jack cheese, ½ cup of mayonnaise, 2 tablespoons of lime juice, and salt and pepper to taste.
