Step-by-Step Instructions
  1. In a heavy skillet, melt 2 tablespoons of butter over medium-high heat until bubbling.
  2. Add 2 cups of fresh or frozen corn, 1 diced onion, 1 chopped jalapeño, and 1 diced red pepper into the hot skillet.
  3. After the initial charring, stir the vegetable mixture frequently for another 5 minutes until they are evenly charred and softened.
  4. Lower the heat to medium-low, then stir in 2 cups of shredded Monterey Jack cheese, ½ cup of mayonnaise, 2 tablespoons of lime juice, and salt and pepper to taste.
  5. Continue cooking, stirring until the cheese is fully melted and all ingredients are well combined, about 2-3 minutes.
  6. Once beautifully melted and mixed, remove the skillet from heat and serve warm, garnished with freshly chopped cilantro.
