Cooking Steps
  1. In a large, high-sided skillet over medium heat, warm 1 tablespoon of olive oil until it shimmers.
  2. Add 4 oz of chopped sun-dried tomatoes, 16 oz of uncooked potato gnocchi, 5 minced garlic cloves, and 1 teaspoon of Italian seasoning. Stir continuously for about 2 minutes.
  3. Pour in 0.5 cup of chicken broth and 1 cup of heavy cream, mixing thoroughly. Increase heat to medium-high until mixture comes to a gentle boil.
  4. Once boiling, reduce heat to medium and cover. Let simmer for 5 minutes.
  5. Uncover the skillet and add 5 oz of fresh spinach and 7 oz of chopped canned artichoke hearts. Stir well and cook for an additional 5 minutes.
  6. Taste and adjust seasoning with 0.25 teaspoon of salt and red pepper flakes if desired. Serve warm garnished with fresh thyme leaves.
