Preparation Steps
  1. Begin by bringing a large pot of salted water to a rolling boil. Add your pasta of choice and cook according to the package instructions, usually around 8-10 minutes, until al dente. Remember to reserve 1 cup of the pasta cooking water before draining the pasta.
  2. In a large sauté pan, heat olive oil over low heat. Add diced onion and sauté for about 5-7 minutes, stirring frequently until the onions become translucent and fragrant. Stir in minced garlic, salt, black pepper, and red pepper flakes. Cook for an additional 2 minutes until the garlic is aromatic but not browned.
  3. Transfer the sautéed onion and garlic mixture to a blender, adding the drained can of white beans and 1/2 cup of reserved pasta water. Blend on high until the mixture reaches a smooth and creamy consistency, about 1-2 minutes.
  4. Return the blended sauce back to the sauté pan over low heat. Pour in the remaining 1/2 cup of reserved pasta water and stir well to combine. Heat the sauce gently for about 2-3 minutes.
  5. Once the sauce is warmed, add the cooked pasta directly into the sauté pan. Toss gently to ensure that every strand of pasta is evenly coated with the creamy white bean sauce.
  6. Remove the pan from the heat and serve your Creamy White Bean Pasta warm. Garnish each plate with a sprinkle of chopped fresh parsley for a touch of color and freshness.
