Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package directions until al dente, usually around 8-12 minutes. Reserve 1 cup of starchy pasta water before draining.
  2. Sauté Onion and Garlic: Heat olive oil over low to medium heat. Add diced onion and minced garlic. Cook for 5-7 minutes or until onion becomes translucent. Do not burn garlic.
  3. Blend the Sauce: Transfer the sautéed mixture to a blender. Add drained white beans and ½ cup of reserved pasta water. Blend until smooth.
  4. Adjust the Sauce Consistency: Return blended mixture to sauté pan over low heat. Gradually add reserved pasta water until you reach a creamy consistency, about 1-2 minutes.
  5. Season the Sauce: Warm the sauce for 3-5 minutes, stirring frequently. Season with salt, black pepper, and red pepper flakes.
  6. Combine Pasta and Sauce: Add cooked pasta to the sauce and toss for 2-3 minutes to coat evenly.
  7. Serve and Garnish: Plate immediately, garnishing with chopped parsley. Enjoy hot.
