Method

Cooking Instructions
  1. Boil a large pot of salted water. Add pasta and cook according to package instructions, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a sauté pan, heat olive oil over low to medium heat. Add onion and garlic, stirring for about 3-5 minutes until the onions are translucent.
  3. Transfer sautéed onion and garlic to a blender. Add white beans, lemon juice, and reserved pasta water. Blend until smooth.
  4. Check the sauce consistency; if too thick, add remaining pasta water gradually while blending until smooth.
  5. Pour the blended sauce back into the sauté pan over low heat. Stir and warm for 3-5 minutes, seasoning with salt and pepper.
  6. Add the drained pasta to the sauce. Toss gently to coat the pasta evenly in the sauce.
  7. Serve immediately, garnished with parsley and red pepper flakes, if desired.

Notes

For best results, sauté aromatics on low heat to enhance sweetness. Adjust sauce consistency while blending as it will thicken when cooled.
