  1. Begin by cutting the chicken breast or thighs into evenly sized bite-sized pieces, ensuring they cook uniformly. Season with garlic powder, paprika, salt, and pepper, tossing gently.
  2. In one bowl, beat the eggs until smooth. In a separate bowl, place the cornstarch. Dip each seasoned chicken piece into the egg, then coat thoroughly in cornstarch.
  3. Heat oil in a deep pan over medium-high heat, aiming for around 180°C (350°F). Carefully add the coated chicken pieces in batches to avoid overcrowding, frying for 4–6 minutes until golden brown.
  4. While the chicken fries, prepare your Bang Bang Sauce by combining mayonnaise, sweet chili sauce, sriracha, honey, and a splash of lime juice. Stir until smooth and creamy.
  5. Once the chicken is golden and crispy, remove it from the oil and let it cool slightly on a paper towel-lined plate. Toss warm chicken with Bang Bang Sauce to coat evenly.
