Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook until they float, about 2-3 minutes. Remove and drain.
  2. In a frying pan, heat olive oil over medium-high heat. Add gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden.
  3. Gently stir gnocchi to crisp all sides for another 2-3 minutes until evenly browned.
  4. Reduce heat to medium. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Add spinach to the pan and cook for 2-3 minutes until wilted and brightened.
  6. Sprinkle in salt, black pepper, and optional red pepper flakes. Toss to combine.
  7. Remove from heat and fold in crumbled feta cheese. Serve immediately.
