Cooking Steps
- Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook until they float, about 2-3 minutes. Remove and drain.
- In a frying pan, heat olive oil over medium-high heat. Add gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden.
- Gently stir gnocchi to crisp all sides for another 2-3 minutes until evenly browned.
- Reduce heat to medium. Add minced garlic and sauté for about 1 minute until fragrant.
- Add spinach to the pan and cook for 2-3 minutes until wilted and brightened.
- Sprinkle in salt, black pepper, and optional red pepper flakes. Toss to combine.
- Remove from heat and fold in crumbled feta cheese. Serve immediately.
