  1. In a large mixing bowl, combine melted unsalted butter with granulated sugar, whisking until smooth and creamy. Incorporate one large egg, followed by coconut milk, vanilla extract, and ube extract. Mix well until the ingredients are fully integrated.
  2. In a separate bowl, whisk together ube halaya, salt, baking powder, corn starch, all-purpose flour, and sweet rice flour until smooth.
  3. Gradually fold the dry mixture into the wet mixture using a spatula. Aim for just combined; having some lumps is fine.
