  • 1.5 cups Frozen Corn Preferably fire-roasted.
  • 1 can (15 oz) Black Beans Rinsed to reduce sodium.
  • 1 can (4 oz) Diced Green Chiles Adjust to spice liking.
  • 2 tsp Chili Powder Adjust to taste.
  • 0.5 tsp Smoked Paprika Regular paprika can be used.
  • 1.25 tsp Ground Cumin Essential for authentic flavor.
  • 1 tsp Salt Scale back if watching sodium.
  • 0.5 tsp Black Pepper
  • 1 cup Low-Sodium Chicken Broth Vegetable broth is a great alternative.
For Creaminess
  • 2 cups Shredded Sharp Cheddar Cheese Consider dairy-free alternatives.
  • 2 cups Half-and-Half or Heavy Cream Coconut milk is an excellent substitute.

Method
 

Step-by-Step Instructions
  1. Lightly spray the inside of a 6-quart slow cooker with cooking spray.
  2. Combine all the first ingredients in the slow cooker and stir thoroughly.
  3. Cover and cook on high for 3-5 hours or low for 4-6 hours.
  4. Carefully remove the chicken, shred it, and return to the slow cooker.
  5. Stir in the shredded cheddar cheese and half-and-half or heavy cream.
  6. Ladle the chowder into bowls and add your favorite toppings.
