- Combine coleslaw mix, black beans, canned corn, jalapeño, red bell pepper, and green onions in a large mixing bowl and toss for 1 minute.
- Sprinkle taco seasoning and ground cumin over the mixture, fold in gently for 2 minutes until evenly coated.
- In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
- Pour the dressing over the slaw mixture, fold gently until evenly coated for about 2 minutes.
- Fold the majority of the Chili Cheese Fritos into the slaw, leaving some aside for topping.
- Serve immediately in a large bowl or plates, topped with reserved Fritos.
