Ingredients
  

For the Slaw
  • 1 bag Coleslaw mix pre-packaged for ease
  • 1 cup Black beans rinsed and drained
  • 1 cup Canned corn kernels drained thoroughly
  • 1 each Jalapeño pepper omit for less heat
  • 1 each Red bell pepper diced
  • 2 each Green onions finely sliced
  • 1/4 cup Fresh cilantro or parsley as substitute
For the Seasoning
  • 2 tablespoons Taco seasoning or homemade blend
  • 1 teaspoon Ground cumin
  • 2 cups Chili Cheese Fritos save a handful for topping
For the Dressing
  • 1/2 cup Sour cream or Greek yogurt
  • 1/4 cup Mayonnaise or vegan mayo
  • 2 each Fresh lime juice about 2 limes
  • 1 tablespoon Chipotle sauce or smoked paprika

Method
 

Preparation Steps
  1. Combine coleslaw mix, black beans, canned corn, jalapeño, red bell pepper, and green onions in a large mixing bowl and toss for 1 minute.
  2. Sprinkle taco seasoning and ground cumin over the mixture, fold in gently for 2 minutes until evenly coated.
  3. In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  4. Pour the dressing over the slaw mixture, fold gently until evenly coated for about 2 minutes.
  5. Fold the majority of the Chili Cheese Fritos into the slaw, leaving some aside for topping.
  6. Serve immediately in a large bowl or plates, topped with reserved Fritos.
