Cooking Steps
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for about 5 minutes until translucent.
- Stir in diced sweet potatoes and chopped apples, cooking for another 5 minutes.
- Sprinkle in curry powder, stir well and cook for 1-2 minutes.
- Pour in vegetable broth, bring to boil, then reduce heat and simmer for 20 minutes.
- Using an immersion blender, puree the soup until smooth.
- Adjust seasoning with salt and pepper. Serve hot with optional toppings.
