  • 2 tablespoons Curry Powder Adjust for spice preference
  • 4 cups Vegetable Broth Use low-sodium if preferred
  • 1 medium Onion Chopped, can use shallots or leeks
  • 2 cloves Garlic Minced, fresh preferred
  • 1 tablespoon Olive Oil For sautéing, avocado oil can be substituted
Optional Toppings
  • 1/2 cup Coconut Milk For creaminess
  • 1/4 cup Toasted Pumpkin Seeds For crunch
  • Fresh Cilantro For garnish

Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for about 5 minutes until translucent.
  2. Stir in diced sweet potatoes and chopped apples, cooking for another 5 minutes.
  3. Sprinkle in curry powder, stir well and cook for 1-2 minutes.
  4. Pour in vegetable broth, bring to boil, then reduce heat and simmer for 20 minutes.
  5. Using an immersion blender, puree the soup until smooth.
  6. Adjust seasoning with salt and pepper. Serve hot with optional toppings.
